En esta receta, las instrucciones se dan en formas de MANDATOS informales. These are COMMAND forms.
1. Corta el pollo... Sazona con sal.... Corta el cerdo...
Cada verbo es un mandato que dice "Do this." y hablando en manera informal o "tú".
Did you notice anything different about some of the verb forms? The recipe starts with command forms and uses them most of the time. Sometimes, the writer switches to using the infinitive (or unconjugated form.) You will also see recipes written completely using infinitive verbs - and this is ok. HOWEVER, it is not ok to switch between different verb usages throughout a recipe like this one. When writing something like this, you should keep to one way of addressing your reader. If you're going to use informal commands, stick to them! If you choose formal commands (that works too), stick to them! If you choose to write it in passive voice, stay with passive until the end! By the way, no judgement on the writer of this recipe - they didn't write it for a grammar class!
